These Homemade Greek Fries are crispy on the outside, fluffy on the inside, and bursting with Mediterranean flavor. Seasoned with oregano, garlic, and lemon, then topped with crumbled feta, they’re a perfect side dish or snack. This recipe offers a healthier oven-baked option or a classic fried version, and it’s easy to prepare with simple, budget-friendly ingredients.

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • ½ lemon, juiced
  • Crumbled feta cheese (for topping)
  • Fresh parsley, chopped (optional)
  • Vegetable oil (if frying)

Instructions

  1. Wash and Slice Potatoes: Scrub the russet potatoes clean. Cut each potato in half lengthwise, then into 3–4 thick wedges per half. Try to keep them similar in size.
  2. Soak the Wedges: Place wedges in a bowl of cold water and soak for 30–60 minutes. This removes excess starch for a crisper result.
  3. Drain and Dry: Drain the potatoes and use a clean kitchen towel to dry them thoroughly. Moisture prevents crisping, so dry as completely as possible.
  4. Season the Potatoes: Transfer dried wedges to a bowl. Toss with olive oil, oregano, garlic powder, salt, and black pepper until fully coated.
  5. Cooking Options:
    Baked: Preheat oven to 220°C (425°F). Line a baking sheet with parchment paper. Spread wedges in a single layer. Bake for 25–30 minutes, flipping halfway, until golden and crisp.
    Fried: Heat vegetable oil in a deep pot to 180°C (350°F). Fry wedges in batches for 6–8 minutes until golden brown and cooked through. Drain on paper towels.
  6. Finish the Fries: While hot, drizzle with lemon juice, sprinkle with extra oregano, and top with crumbled feta. Garnish with fresh parsley if desired. Serve immediately.

Notes

For extra crispiness, do not skip soaking and drying.

Feta can be replaced with dairy-free cheese if needed.
