These Homemade Easy Cheesy Pizza Pockets are a delicious, kid-friendly snack or meal option that combines a soft, golden crust with a rich, cheesy filling. Made with a simple dough and customizable ingredients, they’re perfect for lunchboxes, dinner, or make-ahead freezer meals.

For the Dough:

  • 2 ½ cups all-purpose flour
  • 2 teaspoons instant yeast
  • 1 teaspoon sugar
  • ¾ teaspoon salt
  • 2 tablespoons olive oil
  • ¾ cup warm water (plus more if needed)

For the Filling:

  • ½ cup thick pizza sauce or tomato sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup diced cooked turkey bacon or chicken ham
  • 1 small green bell pepper, diced
  • 1 small onion, finely chopped
  • 1 teaspoon dried oregano

Optional:

  • 1 egg, beaten (for egg wash)

Instructions

  1. Make the Dough:
    In a large bowl, mix flour, yeast, sugar, and salt. Add olive oil and warm water. Stir until combined.
    Knead the dough for 6–8 minutes until smooth. Add extra water if needed.
    Place in a greased bowl, cover, and let rise for 45 minutes or until doubled in size.
  2. Prepare the Filling:
    In a separate bowl, mix the pizza sauce, mozzarella cheese, diced turkey bacon (or chicken ham), bell pepper, onion, and oregano. Set aside.
  3. Divide and Roll the Dough:
    Once risen, punch down the dough. Divide it into 8 equal portions.
    Roll each into a ⅛-inch-thick circle on a floured surface.
  4. Fill the Pockets:
    Add a spoonful of filling in the center of each round.
    Fold the dough over into a half-moon shape.
    Press the edges tightly together, then crimp with a fork to seal.
  5. Prepare for Baking:
    Preheat the oven to 200°C (390°F).
    Place the pockets on a parchment-lined baking sheet.
    Brush with egg wash if using.
    Cut 1–2 small slits on top of each pocket to allow steam to escape.
  6. Bake:
    Bake for 15–18 minutes until golden brown.
    Let cool for 5 minutes before serving.

Notes

You can replace turkey bacon with cooked ground beef or sautéed vegetables.

Puff pastry can be used instead of dough for a flakier version.

Store-bought dough also works well if short on time.

For a vegetarian version, omit meat and increase the veggies.
