  • 1 cup rolled oats (blended into oat flour)
  • 1/2 cup unsweetened almond butter or peanut butter
  • 1/4 cup pure maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon sea salt
  • 1 cup dark chocolate chips (divided)

Instructions

  1. Blend rolled oats in a food processor until they form a fine oat flour.
  2. In a medium bowl, mix almond butter, maple syrup, and vanilla extract until smooth.
  3. Gradually add oat flour to the wet mixture, stirring until a dough forms. Add a splash of almond milk if needed.
  4. Fold in sea salt and half of the dark chocolate chips.
  5. Melt half of the chocolate chips in the microwave or double boiler, stirring until smooth.
  6. Spread melted chocolate evenly on a parchment-lined baking sheet.
  7. Spread the cookie dough mixture evenly over the melted chocolate.
  8. Melt remaining chocolate chips and drizzle or spread over the cookie dough layer.
  9. Freeze the bark for at least 30 minutes to set.
  10. Break into pieces and store in an airtight container in the fridge or freezer.

Use natural, unsweetened nut butter for best flavor and health benefits.

You can substitute nut butters or add mix-ins like nuts or dried fruit.

For a nut-free version, use sunflower seed butter.
