These Harry Potter Letter Caramel Apple Pies are flaky, golden envelopes filled with a warm caramel apple center. Each pie looks like a magical letter sealed with a pastry “stamp,” making them perfect for themed parties or cozy family desserts. Simple, affordable, and fun to bake, they’re a little taste of magic straight from your oven.

  • 2 medium apples (Granny Smith or Honeycrisp), peeled and diced
  • 2 tablespoons butter
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅓ cup caramel sauce
  • 1 package pie dough (homemade or store-bought)
  • 1 egg, beaten (for egg wash)
  • 1 teaspoon milk (for egg wash)
  • 1 drop red food coloring (optional, for seal decoration)

Instructions

  1. Peel and dice the apples into small cubes. Place them in a bowl, then add sugar, cinnamon, and nutmeg. Toss until the apples are coated.
  2. Melt butter in a saucepan over medium heat. Add the apple mixture and cook until softened slightly. Stir in caramel sauce, simmer briefly, then remove from heat and let the filling cool.
  3. Roll out the pie dough on a floured surface to about ⅛ inch thick. Cut the dough into rectangles about the size of small envelopes.
  4. Place one rectangle on your work surface. Spoon a small portion of filling into the center, leaving space around the edges.
  5. Fold the dough like an envelope—tuck in the sides, fold the bottom flap up, and then fold the top flap down. Press edges firmly to seal.
  6. Cut a small circle from leftover dough and place it in the center as the “seal.” Brush with egg wash, and if desired, tint the seal with red food coloring.
  7. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper, then arrange pies with space between them.
  8. Bake for 18–22 minutes, until golden brown and crisp.
  9. Allow to cool slightly before serving. Enjoy warm, with ice cream or extra caramel if desired.

Notes

Do not overfill the pies, as this may cause leaks.

Store leftover baked pies in an airtight container for up to three days. Reheat in the oven for best texture.

The filling can be made ahead and chilled for up to 24 hours before assembling the pies.
