  • ¼ cup butterscotch sauce

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Sift together flour, baking powder, and salt in a large bowl.
  3. In another bowl, beat butter and sugar until light and fluffy (3-5 minutes).
  4. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  5. Alternately add dry ingredients and cream soda to the butter mixture, starting and ending with dry ingredients. Mix gently until combined.
  6. Fold in butterscotch sauce carefully.
  7. Fill cupcake liners two-thirds full with batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely before frosting.
