  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 2 tablespoons sour cream

  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • dark chocolate shavings for decoration

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine 1 ½ cups of graham cracker crumbs with ½ cup of melted unsalted butter.
  3. Mix until well combined.
  4. Press this mixture firmly into the bottom of a 9-inch springform pan to create an even layer.
  5. Bake in the preheated oven for about 10 minutes or until golden brown.
  6. Remove from oven and let cool completely.
  7. In another bowl, beat 16 ounces of softened cream cheese with an electric mixer on medium speed until smooth and fluffy—about 2-3 minutes.
  8. Add one cup of pumpkin puree, one cup of sugar, and two tablespoons of sour cream into the cream cheese mixture.
  9. Then add one teaspoon of vanilla extract along with half a teaspoon each of cinnamon and nutmeg.
  10. Beat on low speed until everything is fully incorporated.
  11. Gently pour this deliciously spiced mixture over your cooled graham cracker crust in the springform pan.
  12. Smooth out the top with a spatula so it looks as fancy as possible.
  13. Bake in your preheated oven at 325°F (160°C) for about 60 minutes or until just set in the center but still slightly jiggly.
  14. Turn off the oven and crack open the door slightly; allow it to cool inside for another hour to prevent cracking.
  15. Once cooled completely at room temperature, refrigerate for at least four hours or overnight if possible.
  16. When ready to serve, remove from fridge and carefully take off the sides of the springform pan.
  17. Top with dark chocolate shavings before slicing into pieces fit for any spooky celebration.
