  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup protein powder (chocolate or vanilla)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs (or flax eggs for vegan option)
  • 1/4 cup coconut oil or nut butter, melted
  • 1/3 cup natural sweetener (maple syrup, honey, or agave)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a mini muffin pan with parchment paper or grease it lightly.
  2. In a large bowl, whisk together oat flour, cocoa powder, protein powder, baking powder, and salt.
  3. In a separate bowl, combine eggs, melted coconut oil or nut butter, natural sweetener, and vanilla extract. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients gradually, stirring gently until just combined. Avoid overmixing.
  5. Spoon the batter evenly into the muffin pan, filling each cup about three-quarters full.
  6. Bake for 12-15 minutes. Check doneness by inserting a toothpick; it should come out with a few moist crumbs.
  7. Allow the bites to cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

Use gluten-free oat flour for a gluten-free version.

For vegan brownies, substitute eggs with flax or chia eggs and use vegan protein powder.
