This Ground Turkey Sweet Potato Bake is a wholesome, hearty dish that combines lean protein with nutrient-rich sweet potatoes and flavorful vegetables. It is easy to prepare, budget-friendly, and versatile enough to serve as a family dinner, a meal prep option, or a dish to share at gatherings.

  • 1 lb ground turkey
  • 3 medium sweet potatoes, peeled and cubed
  • 1 medium onion, diced
  • 2 bell peppers, diced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • 1 cup shredded cheese (optional, for topping)
  • Fresh parsley or green onions, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a medium baking dish.
  2. Peel and cube the sweet potatoes. Place them in a bowl with 1 tbsp olive oil, paprika, salt, and pepper. Toss to coat evenly.
  3. Spread the sweet potato cubes on a baking sheet and roast for 15 minutes until slightly tender.
  4. Heat a large skillet over medium heat and add 1 tbsp olive oil. Add the ground turkey, breaking it apart as it cooks. Season with cumin, oregano, onion powder, salt, and pepper. Cook until browned and no longer pink.
  5. Add diced onion and bell peppers to the skillet. Cook for 5–6 minutes until softened. Stir in minced garlic and cook for 1 minute more.
  6. In the greased baking dish, spread half of the roasted sweet potatoes on the bottom. Spoon the turkey and vegetable mixture evenly over the top. Add the remaining sweet potatoes as the final layer.
  7. Sprinkle shredded cheese on top if desired.
  8. Bake for 25–30 minutes until the sweet potatoes are tender and the dish is hot throughout. If using cheese, bake until melted and golden.
  9. Remove from oven and let rest for 5 minutes. Garnish with parsley or green onions before serving.

Notes

For added flavor, try adding chili powder or crushed red pepper flakes.

This recipe reheats and freezes well, making it great for meal prep.

You can substitute some sweet potatoes with zucchini or cauliflower for a lower-carb option.
