Inspired by the mischievous green character from How the Grinch Stole Christmas, these bite-sized cheesecakes feature a buttery graham cracker crust, smooth cheesecake filling, and a playful green swirl.   • 2 packages (16 oz) cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs

  • Green food coloring

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (160°C).
  2. Prepare Crust: Mix crushed graham crackers with melted butter. Press about a tablespoon into each cupcake liner to form the crust.
  3. Make Filling: Beat cream cheese until smooth. Gradually add sugar, then eggs one at a time. Mix in vanilla extract and lemon juice.
  4. Color Filling: Divide filling; add green food coloring to one portion and mix until even.
  5. Assemble Cheesecakes: Spoon plain filling over crust, add green filling in center. Swirl gently with a toothpick.
  6. Bake: Bake for 18–22 minutes until edges are set and centers slightly wobble.
  7. Cool: Let cool to room temperature, then refrigerate 2–3 hours or overnight.
  8. Decorate: Top with whipped cream, frosting, or festive decorations as desired.
