  • 8 oz cream cheese, softened to room temperature
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, chilled

  • Agar-agar, plant-based gelling agent
  • Your choice of cookie crust (e.g., Graham crackers or Oreo crumbs), crushed into fine crumbs mixed with melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine 1 ½ cups crushed cookie crumbs with 5 tablespoons melted butter.
  3. Mix until well combined and resembles wet sand.
  4. Press this mixture firmly into the bottom of cupcake liners in a muffin tin.
  5. Bake for 10 minutes until set, then let it cool completely.
  6. In a large mixing bowl, beat 8 oz softened cream cheese and ½ cup granulated sugar together until smooth and creamy using an electric mixer on medium speed.
  7. Add in 1 teaspoon vanilla extract and continue mixing until fully incorporated.
  8. In another bowl, pour in 1 cup chilled heavy whipping cream along with ½ cup powdered sugar and 1 tablespoon lemon juice.
  9. Beat on high speed until stiff peaks form, which may take about 3-4 minutes.
  10. Gently fold one-third of the whipped cream into the cream cheese mixture using a spatula until well blended.
  11. Then fold in the remaining whipped cream until no streaks remain.
  12. Stir in several drops of green food coloring until you achieve your desired shade of Grinch-green.
  13. In a separate small bowl, mix agar-agar with water according to package instructions, then heat gently until dissolved before incorporating it into your mixture.
  14. Spoon or pipe this delicious green filling over your cooled cookie crusts in each cupcake liner.
  15. Smooth out the tops with an offset spatula if needed.
  16. Cover them with plastic wrap and refrigerate for at least four hours or overnight.
