Ingredients

Scale
  • firm cheese (Kefalotyri or Halloumi)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup freshly squeezed lemon juice
  • fresh herbs (oregano or thyme)
  • olive oil for frying

Instructions

  1. Gather all your ingredients and tools, including a frying pan, mixing bowls, and a spatula.
  2. Heat about half an inch of olive oil in your frying pan over medium heat until shimmering but not smoking.
  3. Cut your chosen cheese into thick slices, about half an inch each.
  4. In one bowl, whisk together eggs and lemon juice until smooth.
  5. In another bowl, place flour or semolina flour.
  6. Dip each slice of cheese first into the egg mixture then coat it generously with flour.
  7. Carefully place coated cheese slices into the hot oil and fry until golden brown on one side, about 2-3 minutes.
  8. Flip the cheese slices gently using a spatula and cook until both sides are beautifully crispy.
  9. Once both sides are golden brown and crispy, remove them from the oil and let them drain on paper towels.
  10. Sprinkle freshly chopped herbs over the cheese while they are still hot.
  11. Garnish with extra lemon wedges on the side before serving.
  12. Enjoy immediately while they are still warm and crispy.
