Ingredients

Scale
  • 250g macaroni pasta
  • 100g chicken ham, diced
  • 100g turkey bacon, chopped and cooked
  • 1 medium red bell pepper, diced
  • 1 medium cucumber, diced
  • 2 medium carrots, shredded
  • 1 small red onion, finely chopped
  • 200ml mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp sugar
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add macaroni and cook until al dente, about 8–10 minutes. Drain and rinse under cold water, then transfer to a large mixing bowl.
  2. Wash and dice the red bell pepper and cucumber. Shred the carrots and finely chop the red onion. Place all vegetables in a separate bowl.
  3. Cook chopped turkey bacon in a skillet over medium heat until crispy, about 5–7 minutes. Drain excess fat using paper towels.
  4. In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, sugar, salt, and pepper until smooth. Adjust seasoning to taste.
  5. Add vegetables to the cooled macaroni and toss gently. Pour the dressing over the mixture and fold in chicken ham and crispy turkey bacon. Mix carefully to coat all ingredients.
  6. Cover and refrigerate for 1–2 hours. Just before serving, garnish with chopped parsley.

Notes

Prepare the dressing ahead of time for deeper flavor.

Customize with extra vegetables or cheese if desired.

Ensure pasta is cooled before mixing with dressing to maintain texture.
