Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. Wash and cut the sweet potatoes into uniform wedges for even cooking.
  3. In a large mixing bowl, drizzle olive oil over the wedges. Add minced garlic, paprika, oregano or thyme, salt, and pepper. Toss to coat evenly.
  4. Sprinkle Parmesan cheese over the seasoned wedges and toss lightly to adhere.
  5. Arrange wedges in a single layer on the prepared baking sheet, leaving space between each wedge.
  6. Roast in the oven for 25–30 minutes, flipping halfway through to ensure both sides become golden and crispy.
  7. Check doneness by inserting a fork into the thickest part of a wedge; it should slide in easily. Roast an additional 3–5 minutes if needed.
  8. Transfer roasted wedges to a serving dish, garnish with fresh parsley, and serve immediately.
