Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. In a large mixing bowl, cream together 1 cup of softened unsalted butter, ½ cup of cane sugar, and ½ cup of brown sugar until light and fluffy—about 3 minutes.
  4. Beat in 2 large eggs one at a time, followed by 1 teaspoon of pure vanilla extract.
  5. In another bowl, whisk together 2¾ cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt.
  6. Gradually add the dry mixture into your wet ingredients while mixing on low speed until no flour streaks remain.
  7. Gently fold in ¾ cup of rainbow sprinkles using a spatula.
  8. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the lined baking sheets about two inches apart.
