For the cookies:

  • 1 cup unsalted butter, melted
  • 1 1/4 cups granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips

For the ganache topping:

  • 3/4 cup heavy cream
  • 1 cup semisweet chocolate chips

For decoration:

  • Rainbow candy-coated chips or mini chocolate-coated candies

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Melt the butter and let it cool slightly.
  3. In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Sift in cocoa powder and mix until incorporated.
  6. Add flour, baking soda, and salt. Mix until a thick dough forms.
  7. Fold in semisweet chocolate chips until evenly distributed.
  8. Scoop dough into balls using a cookie scoop or tablespoon. Place on baking sheets, spacing 2 inches apart.
  9. Gently flatten each dough ball with your fingers or the back of a spoon.
  10. Bake for 9–11 minutes. The centers should look slightly underbaked.
  11. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  12. Heat heavy cream until hot but not boiling. Pour over semisweet chocolate chips in a bowl.
  13. Let sit for 1 minute, then stir until smooth ganache forms. Allow to cool slightly.
  14. Spoon ganache onto each cooled cookie and spread gently to cover the tops.
  15. While ganache is still soft, sprinkle with rainbow candy-coated chips. Gently press them in.
  16. Let ganache set before serving or storing.

Do not overbake—slightly soft centers ensure a fudgy texture.
