These Fresh Vegetable Tortilla Roll Ups are colorful, crunchy, and versatile. Perfect as appetizers, snacks, or light lunches, they combine fresh vegetables, creamy spreads, and optional proteins like turkey bacon and chicken ham for a satisfying bite.   • 4 large tortillas
  • 1 cup cream cheese or hummus
  • 1 small carrot, julienned
  • 1 small cucumber, sliced into thin strips
  • 1 bell pepper (any color), thinly sliced
  • 1/2 cup baby spinach leaves
  • 1/4 cup chopped fresh herbs (parsley or cilantro)
  • 4 slices turkey bacon, cooked and chopped (optional)
  • 4 slices chicken ham, chopped (optional)
  • Salt and pepper, to taste

Instructions

  1. Wash and Prepare Vegetables: Wash all vegetables thoroughly. Julienne the carrot, slice the cucumber into thin strips, and cut the bell pepper into slender slices. Keep vegetables uniform for easier rolling.
  2. Cook Proteins: If using turkey bacon, cook until crisp and chop into small pieces. Dice chicken ham into thin slices. Let cool slightly.
  3. Spread Base Layer: Lay a tortilla flat and spread a thin, even layer of cream cheese or hummus over the surface, leaving a small border around the edges.
  4. Layer Ingredients: Place a layer of baby spinach leaves on the spread. Add carrots, cucumber strips, bell pepper slices, and chopped herbs. Sprinkle with turkey bacon or chicken ham if desired. Season lightly with salt and pepper.
  5. Roll the Tortilla: Starting from one edge, roll the tortilla tightly but gently to keep ingredients inside. Avoid rolling too tightly to prevent fillings from spilling.
  6. Chill the Roll-Ups: Wrap each roll in plastic wrap or parchment paper. Refrigerate for 15–20 minutes to help them hold their shape.
  7. Slice and Serve: Remove wraps from the refrigerator and slice into 1–1.5 inch pinwheels using a sharp knife. Arrange on a platter and serve immediately or keep refrigerated until ready to eat.
