  • 1 can (10.5 ounces) cream of mushroom soup, low-sodium
  • 1 cup sour cream, full-fat
  • 2 cups thinly sliced onions

  • 1 1/2 cups shredded cheese (cheddar and Gruyère mix)
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter (for panko topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with cooking spray or butter.
  3. In a large skillet over medium heat, melt 2 tablespoons of butter.
  4. Add 2 cups of thinly sliced onions and cook until they’re soft and golden brown, about 15-20 minutes.
  5. In a large bowl, mix one can (10.5 ounces) of cream of mushroom soup, one cup of sour cream, and half a cup of shredded cheese.
  6. Fold in the sautéed onions gently and then add the frozen hash browns.
