French Onion Chicken Rice combines the rich, caramelized flavor of onions with tender chicken and fluffy rice, creating a comforting, hearty meal that’s perfect for any night of the week. This dish is easy to prepare, customizable, and packed with flavor, making it a favorite for family dinners or casual gatherings.

  • 23 chicken breasts or thighs
  • 1 ½ cups long-grain rice
  • 34 large yellow onions, thinly sliced
  • 3 cups chicken broth
  • 2 tablespoons olive oil or butter
  • 2 garlic cloves, minced
  • ½ cup grated cheese (optional, mozzarella or cheddar)
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Heat olive oil or butter in a skillet over medium heat. Add sliced onions and cook slowly, stirring occasionally, until golden and caramelized (about 20–25 minutes). Add minced garlic in the last minute of cooking, then remove from heat.
  3. Season chicken with salt, pepper, and thyme. Heat a second skillet with olive oil and brown chicken on both sides for 3–4 minutes. Remove and set aside.
  4. In an ovenproof casserole dish, add uncooked rice and spread the caramelized onions evenly on top. Pour chicken broth over the rice and stir gently.
  5. Place the browned chicken on top of the rice mixture. Cover tightly with foil or a lid.
  6. Bake for 40–45 minutes, checking rice for tenderness after 35 minutes. Remove foil during the last 10 minutes if a golden top is desired.
  7. Optional: Sprinkle grated cheese over the dish in the last 5 minutes of baking and return to oven until melted.
  8. Let the dish rest for 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

For extra flavor, add mushrooms or spinach during the last 10–15 minutes of baking.

Brown rice can be used, but increase broth and cooking time.

Chicken thighs stay juicier than breasts, especially if using larger pieces.

Omit cheese or use dairy-free alternatives for a lighter or vegan-friendly version.
