Ingredients

Scale
  • 1 cup cottage cheese, well-drained
  • 1 cup all-purpose flour, sifted
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup milk, whole or 2%
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine 1 cup of cottage cheese, 2 large eggs, and 1 teaspoon of vanilla extract and whisk until well combined.
  2. In another bowl, whisk together 1 cup of all-purpose flour, 2 tablespoons of sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt.
  3. Gently fold the dry ingredients into the wet mixture using a spatula until just combined and add in 1/2 cup of milk gradually while folding to achieve a smooth batter.
  4. Preheat a non-stick skillet over medium heat and lightly grease it with cooking spray or a dab of butter.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on top (about 2-3 minutes), then flip them over carefully using a spatula.
  6. Cook for an additional 1-2 minutes until golden brown.
  7. Transfer your pancakes onto plates as they come off the skillet and garnish with fresh berries or maple syrup if desired.

Notes

Store leftover pancakes in an airtight container in the fridge for up to three days.

Reheat pancakes in a microwave for about 20-30 seconds, or until warm and fluffy.

Serve with fresh fruit and maple syrup for a delightful breakfast experience.

For extra fluffiness, separate egg whites and beat until stiff before folding into batter.
