Ingredients

  • 2 chicken thighs, skinless
  • 1 red bell pepper, firm
  • 1 cucumber, heavy for size
  • 2 green onions, straight with bright green tops
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon honey, pure
  • 4 flour tortillas, fresh

Instructions

  1. Begin by dicing the chicken thighs into bite-sized pieces.
  2. In a large skillet over medium-high heat, add a drizzle of oil and once hot, toss in the diced chicken.
  3. Cook the chicken until browned and no longer pink—about 6-8 minutes.
  4. Once your chicken is cooked through, reduce the heat to medium-low.
  5. Add in 2 tablespoons of Sriracha sauce and 1 tablespoon of honey directly over the chicken.
  6. Stir well until every piece is coated in the sauce.
  7. Dice the red bell peppers, cucumber, and green onions into thin strips or small chunks.
  8. Lay out each tortilla flat on a clean surface.
  9. Place a generous scoop of spicy chicken in the center of each tortilla.
  10. Layer on some chopped bell peppers, cucumber slices, and sprinkle with green onions.
  11. Fold in two sides of each tortilla over the filling.
  12. Roll from the bottom up until everything is snugly wrapped inside.
  13. Slice each wrap diagonally and serve immediately while they’re still warm.
  14. Garnish with extra chopped green onions or sesame seeds if desired.
