Ingredients

Scale
  • 4 cups arugula, fresh
  • 2 apples, thinly sliced (Honeycrisp or Granny Smith)
  • 1/2 cup walnuts, toasted
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons lemon juice, freshly squeezed
  • 1/4 cup olive oil, extra virgin
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey

Instructions

  1. Wash the arugula thoroughly under cold water and pat it dry with a clean kitchen towel or salad spinner.
  2. Thinly slice the chosen apples, removing any seeds.
  3. In a small skillet over medium heat, add the walnuts and toast them for about 5 minutes, stirring frequently until golden brown and aromatic.
  4. In a small bowl, combine freshly squeezed lemon juice, olive oil, Dijon mustard, and honey, then whisk vigorously until emulsified.
  5. In a large mixing bowl, add the washed arugula followed by the sliced apples and toasted walnuts, then sprinkle crumbled feta over everything.
  6. Drizzle the prepared dressing over the salad ingredients just before serving and gently toss everything together using tongs or two forks.
  7. Transfer the salad onto a large serving platter or individual bowls and garnish with additional apple slices or a sprinkle of feta before serving.
