  • 1 lb ground beef (or ground turkey/chicken for variation)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • 1 avocado, sliced or cubed
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup sour cream or plain Greek yogurt
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Rinse the rice under cold water until the water runs clear. Cook in a saucepan with two cups of water and a pinch of salt. Simmer until tender, then fluff with a fork.
  2. Heat a large skillet over medium heat. Add ground beef and cook until browned. Stir in onion and garlic, cooking until softened. Drain excess fat if needed.
  3. Sprinkle taco seasoning over the beef mixture. Add 1/4 cup of water, stir, and simmer for two to three minutes.
  4. In a small saucepan, warm black beans and corn over low heat. Add a squeeze of lime juice and a pinch of cumin if desired.
  5. Prepare the toppings: chop lettuce, dice tomatoes, slice avocado, shred cheese, and cut lime wedges.
  6. Assemble the bowl: start with rice, then add taco-seasoned beef, beans, and corn. Top with lettuce, tomatoes, and avocado. Sprinkle with cheese, add a dollop of sour cream, garnish with cilantro, and serve with lime wedges.
