  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup freeze-dried strawberries, crushed
  • ½ cup chopped white chocolate (or milk/dark chocolate)
  • Optional: ¼ cup chopped nuts (walnuts or almonds)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the butter and sugar using an electric mixer on medium speed until light and fluffy, about 3–4 minutes.
  3. Add the egg and vanilla extract to the butter-sugar mixture and beat until combined, scraping down the sides of the bowl as needed.
  4. In a separate bowl, whisk together the flour, baking soda, and salt to ensure even distribution of the leavening agent.
  5. Gradually add the dry ingredients to the wet mixture. Mix on low speed until the dough comes together, being careful not to overmix.
  6. Fold in the crushed freeze-dried strawberries, chopped chocolate, and nuts (if using) with a spatula until evenly distributed.
  7. Using a cookie scoop or tablespoon, place portions of dough onto the prepared baking sheet, spacing each about 2 inches apart.
  8. Flatten the tops slightly with a spoon or your fingers for even baking.
  9. Bake in the preheated oven for 12–15 minutes, until edges are lightly golden and centers remain soft.
  10. Remove from the oven and let cookies cool on the baking sheet for 5 minutes. Transfer to a wire rack to cool completely.

Notes

For a fruitier flavor, increase the amount of freeze-dried strawberries.

Dough can be refrigerated for up to 24 hours before baking.

Add-ins like nuts, coconut, or chocolate chips are optional and customizable.
