  • Ricotta cheese – 1 ½ cups
  • Mozzarella cheese – 2 cups, shredded
  • Grated Parmesan cheese – 1 cup

  • Olive oil – 2 tablespoons
  • Salt – to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash and chop the spinach; slice mushrooms; finely chop onion and garlic.
  3. Heat olive oil in a skillet over medium heat. Sauté onions and garlic until translucent (3–4 minutes).

  5. Stir in spinach; cook until wilted (about 2 minutes). Season with salt, pepper, oregano, and basil. Remove from heat.
  6. In a saucepan, warm the cream over low heat. Stir in half of the Parmesan cheese until melted and smooth. Season with salt and pepper.
  7. In a baking dish, spread a thin layer of the creamy sauce.
  8. Layer lasagna sheets over the sauce.
  9. Add a layer of the spinach and mushroom mixture.
  10. Spoon dollops of ricotta cheese evenly over the vegetables.
  11. Pour a portion of the creamy sauce on top.
  12. Sprinkle shredded mozzarella cheese.
  13. Repeat layers until ingredients are used, finishing with mozzarella and remaining Parmesan on top.
  14. Cover with foil and bake for 25 minutes.
  15. Remove foil and bake for an additional 15 minutes until cheese is golden and bubbly.
  16. Let rest for 10 minutes before serving.
