  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup dill pickles, finely chopped
  • 1/4 cup red onion, finely diced
  • 1/3 cup mayonnaise or Greek yogurt
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 46 croissants, sliced in half
  • Optional: fresh dill or celery for extra flavor and crunch

Instructions

  1. Prepare the Chicken: Chop or shred cooked chicken into bite-sized pieces. Place in a medium mixing bowl.
  2. Chop Vegetables and Pickles: Finely dice red onion and chop dill pickles. Add optional celery for crunch.
  3. Mix the Dressing: Combine mayonnaise (or Greek yogurt) and Dijon mustard in a small bowl. Add salt and pepper to taste, whisk until smooth.
  4. Combine Ingredients: Pour dressing over chicken, pickles, and onion. Fold gently until all ingredients are evenly coated. Optional: add fresh dill.
  5. Prepare Croissants: Slice croissants in half horizontally. Optional: lightly toast in the oven at 350°F (175°C) for 3–5 minutes.
  6. Assemble Sandwiches: Spoon chicken salad onto the bottom half of each croissant. Spread evenly, then place the top half on each sandwich.
  7. Serve: Arrange on a platter, serve immediately, or chill for 30 minutes for flavors to meld. Garnish with fresh dill or extra pickle slices if desired.
