These Coffee Cake Cookies are a delightful twist on the classic coffee cake, combining a soft, tender cookie base with a sweet cinnamon streusel topping. Perfect for breakfast, an afternoon snack, or sharing with friends, they’re simple to make, versatile, and always a crowd-pleaser.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup chopped nuts (optional)
  • ½ cup brown sugar (for streusel topping)
  • 1 tsp cinnamon (for streusel topping)
  • 2 tbsp unsalted butter, melted (for streusel topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs, one at a time, followed by vanilla extract until smooth.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Gradually mix dry ingredients into the butter mixture on low speed until just combined. Do not overmix.
  6. Prepare streusel topping by combining ½ cup brown sugar, 1 tsp cinnamon, and 2 tbsp melted butter in a small bowl. Add nuts if desired.
  7. Scoop tablespoon-sized dough portions and roll into balls. Place on prepared baking sheets 2 inches apart.
  8. Sprinkle streusel topping generously on each dough ball and gently press to adhere.
  9. Bake for 12–15 minutes until edges are lightly golden and centers are set. Rotate baking sheets halfway through baking.
  10. Cool cookies on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Optional: add chocolate chips, dried fruit, or a drizzle of glaze.

Use room temperature butter and eggs for best results.

Store in an airtight container to keep cookies soft.
