These decadent Baileys Irish Cream chocolate chip cookies are soft, chewy, and rich in flavor.   • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • ¼ cup Baileys Irish Cream (or non-alcoholic substitute)
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 175°C (350°F). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt until evenly combined. Set aside.
  3. In a large mixing bowl, beat the softened butter with brown sugar and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the Baileys Irish Cream and vanilla extract until fully blended.
  6. Gradually add the dry mixture into the wet mixture, stirring gently to form a smooth dough.
  7. Fold in the chocolate chips until evenly distributed.
  8. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheets, leaving space between each cookie.
  9. Bake in the preheated oven for 10–12 minutes, or until the edges are golden while the centers remain slightly soft.
  10. Remove the trays from the oven and let the cookies cool for 3–4 minutes on the baking sheets.
  11. Transfer the cookies to a wire rack and allow them to cool completely before serving.

Notes

For a non-alcoholic version, replace the Baileys Irish Cream with coffee-flavored creamer or milk mixed with vanilla extract.

For added texture, mix in chopped nuts or caramel chunks along with the chocolate chips.

Do not overmix the dough, as it can make the cookies tough.
