  • 2 large cucumbers, thinly sliced lengthwise
  • 1 ripe avocado
  • 1 cup mixed greens (lettuce, spinach, or arugula)
  • ¼ cup fresh parsley
  • 2 tablespoons fresh chives, chopped
  • ¼ cup Greek yogurt or plant-based alternative
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: shredded carrots, bell peppers, or cooked chicken

Instructions

  1. Prepare the dressing: In a small bowl, mash the avocado until smooth.
  2. Add Greek yogurt, lemon juice, and Dijon mustard to the mashed avocado and mix thoroughly.
  3. Fold in chopped parsley and chives, then season with salt and pepper to taste.
  4. Slice the cucumbers: Use a sharp knife or mandoline to slice cucumbers lengthwise into thin, wide slices. Pat dry with a paper towel to remove excess moisture.
  5. Assemble the wraps: Lay out a cucumber slice on a flat surface.
  6. Place a few leaves of mixed greens on the cucumber slice.
  7. Add optional vegetables like shredded carrots or bell peppers, and cooked chicken if desired.
  8. Spread a generous amount of Green Goddess dressing over the vegetables.
  9. Carefully roll the cucumber slice around the filling, tucking in the sides slightly to hold everything together.
  10. Secure with a toothpick if necessary.
  11. Arrange the wraps on a serving plate and drizzle extra dressing on top if desired.

Notes

Keep cucumbers dry to prevent soggy wraps.

The dressing can be made in advance and stored in the fridge for up to 2 days.
