Ingredients

  • 2 firm cucumbers, preferably English
  • 3 sweet bell peppers (red, yellow, or orange)
  • 1 small red onion
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons olive oil, extra virgin
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon salt, sea salt preferred
  • 1/2 teaspoon pepper, freshly ground

Instructions

  1. Wash all your vegetables thoroughly under cold water.
  2. Peel the cucumbers if desired and slice them into thin rounds or half-moons.
  3. Chop the sweet bell peppers into bite-sized pieces.
  4. Slice the red onion thinly.
  5. In a large mixing bowl, combine the sliced cucumbers, chopped sweet peppers, and red onion.
  6. Add roughly chopped fresh cilantro to the vegetable mix.
  7. In a separate small bowl, whisk together about three tablespoons of olive oil with two tablespoons of freshly squeezed lemon juice.
  8. Add salt and pepper to taste to the dressing.
  9. Pour the dressing over your vegetable mix just before serving.
  10. Using tongs or two forks, toss everything together gently until all the veggies are coated in the dressing.
  11. For an even more refreshing experience, let your salad chill in the fridge for about 30 minutes before serving.
  12. Garnish with additional cilantro if desired and serve immediately.
