Crunchy corn nuggets are a quick, flavorful snack made with sweet corn, a light batter, and golden frying. They are crispy on the outside, soft inside, and perfect for parties, family dinners, or simple everyday snacking.

  • 2 cups sweet corn kernels (fresh, canned, or frozen)
  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ cup milk
  • 1 egg, lightly beaten
  • 2 tablespoons chopped green onions (optional)
  • Oil for frying

Instructions

  1. Prepare the corn by thawing frozen kernels or draining canned corn. Place the corn in a bowl.
  2. In another bowl, whisk together flour, cornmeal, baking powder, salt, black pepper, garlic powder, and paprika.
  3. In a separate bowl, mix the milk with the beaten egg until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir until just combined into a thick batter. Adjust with a little more milk or flour if needed.
  5. Fold the corn kernels and green onions into the batter, ensuring they are evenly coated.
  6. Heat enough oil in a skillet or pan to deep fry the nuggets. The oil should reach about 350°F (175°C).
  7. Scoop small portions of the batter and carefully drop them into the hot oil. Avoid overcrowding the pan.
  8. Fry for 3–4 minutes per side, or until golden brown and crispy. Turn them as needed for even cooking.
  9. Remove the nuggets with a slotted spoon and place on paper towels to drain excess oil.
  10. Serve hot with your choice of dipping sauce.

Notes

Adjust seasoning to taste.

For added flavor, mix in shredded cheese or diced chili peppers.

If baking instead of frying, brush lightly with oil and bake at 400°F (200°C) for 15–18 minutes, flipping halfway through.
