Ingredients

  • 1 pound ground beef, lean
  • 1/2 onion, diced
  • 2 medium carrots, peeled and diced
  • 1 cup frozen peas
  • 1 cup beef broth, low-sodium
  • mashed potatoes, prepared or homemade
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • black pepper, to taste

Instructions

  1. Brown 1 pound of ground beef in a large skillet over medium heat for about 5-7 minutes, breaking apart any large chunks and draining excess fat if necessary.
  2. Add half a diced onion and 2 peeled and diced medium carrots to the skillet and sauté until softened, about 3-4 minutes.
  3. Stir in 1 teaspoon of garlic powder along with salt and pepper to taste.
  4. Transfer the beef mixture into your crockpot and add 1 cup of frozen peas and pour in 1 cup of beef broth along with 1 teaspoon of dried thyme.
  5. Stir everything together until well combined.
  6. If using fresh potatoes, boil peeled potatoes until fork-tender for about 15-20 minutes, then mash them with butter and cream until smooth; if using prepared mashed potatoes, stir in additional butter if desired.
  7. Spread the mashed potatoes evenly over the meat mixture in your crockpot, creating swirls or peaks for a “just baked” look.
  8. Cover your crockpot and cook on low heat for about 6-8 hours or high heat for about 4 hours until everything is hot and bubbly.
  9. Garnish with fresh parsley before serving.

Store leftovers in an airtight container.
