This Crockpot Chicken Parmesan Soup is a comforting, cheesy, and flavorful twist on the classic Italian dish. Perfect for busy weeknights or meal prep, it combines tender chicken, savory turkey bacon, chicken ham, rich tomato broth, pasta, and melted cheese for a hearty, satisfying meal.

  • 1 lb boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 can (28 oz) crushed tomatoes
  • 1 cup diced onions
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup uncooked pasta (rotini, penne, or small shells)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp crushed red pepper flakes (optional)
  • ½ cup turkey bacon, cooked and chopped
  • ½ cup chicken ham, chopped
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt, pepper, and oregano.
  2. Cook turkey bacon in a skillet until crisp, then chop.
  3. Sauté chicken ham for 2–3 minutes until lightly browned.
  4. In the same skillet, sauté onions and garlic for 3–4 minutes until soft.
  5. Transfer onions, garlic, turkey bacon, chicken ham, and chicken breasts into the crockpot.
  6. Add chicken broth, crushed tomatoes, basil, oregano, and crushed red pepper flakes. Stir gently.
  7. Cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  8. Remove chicken, shred it, and return it to the crockpot.
  9. Add uncooked pasta and cook on high for 15–20 minutes until pasta is tender. Stir occasionally.
  10. Lower heat to low and stir in mozzarella and Parmesan cheese until melted and creamy.
  11. Adjust salt, pepper, and herbs to taste before serving.

Notes

For a creamier texture, add ½ cup of milk or cream before the cheese.

Optional vegetables like spinach, bell peppers, or zucchini can be added during step 6.
