This zucchini grilled cheese sandwich is a simple yet flavorful twist on the classic.   • 2 slices of your favorite bread
  • ½ medium zucchini, thinly sliced
  • 2 slices of cheese (cheddar, mozzarella, or your preferred type)
  • 1 teaspoon butter
  • 1 teaspoon olive oil
  • Salt and pepper, to taste
  • Optional: fresh herbs like basil or parsley

Instructions

  1. Wash the zucchini thoroughly and slice it thinly.
  2. Lightly season the zucchini with salt, pepper, and optional herbs.
  3. Heat a non-stick skillet over medium heat and add olive oil.
  4. Sauté zucchini slices for 2–3 minutes on each side until golden and slightly tender. Avoid overcooking.
  5. Spread butter on one side of each bread slice.
  6. Place one slice of bread, buttered side down, onto the skillet.
  7. Layer cheese slices evenly over the bread.
  8. Place the cooked zucchini on top of the cheese.
  9. Cover with the second slice of bread, buttered side up.
  10. Grill over medium heat for 3–4 minutes on each side, pressing gently with a spatula to melt the cheese evenly.
  11. Remove from the skillet and let it rest for 1–2 minutes before slicing.

Notes

Make sure zucchini slices are not too watery to prevent soggy bread.
