Crispy Refried Bean Tacos are a simple, flavorful, and budget-friendly meal. The combination of crunchy taco shells and creamy, seasoned beans makes them a satisfying option for lunch, dinner, or casual gatherings. This recipe is versatile, customizable, and can be adapted to suit vegetarian diets or boosted with additional proteins.

Ingredients

Scale
  • 1 can of refried beans (about 15 ounces)
  • 8 small corn or flour taco shells
  • 1 tablespoon olive oil or cooking spray
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, or salsa

Instructions

  1. Preheat your oven to 375°F (190°C) or heat a skillet over medium heat for crisping taco shells.
  2. In a medium bowl, mix the refried beans with cumin, paprika, salt, and pepper until evenly combined.
  3. Heat the seasoned beans in a saucepan over medium heat with a teaspoon of olive oil, stirring occasionally for 5–7 minutes until smooth and warm.
  4. Lightly brush the taco shells with olive oil. Bake in the oven for 5–8 minutes until golden and crisp, or crisp each shell on a skillet for 2–3 minutes per side.
  5. Spoon the warm beans into each taco shell, spreading evenly.
  6. Add optional toppings such as shredded lettuce, diced tomatoes, shredded cheese, or sour cream.
  7. Serve immediately for best results, ensuring the shells remain crunchy.

Notes

Homemade refried beans can be used instead of canned.

Store leftover shells separately to maintain crispiness.

Add extra vegetables, black beans, or protein to customize.

Re-crisp stored shells in the oven for a few minutes before serving.
