  • 1 cup grated parmesan cheese
  • 1 cup seasoned breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 2 large eggs
  • 2 tablespoons milk
  • Olive oil for pan-frying

Instructions

  1. Trim and, if needed, slice the chicken breasts horizontally to create even cutlets about ½ inch thick.
  2. Pound the chicken between plastic wrap or parchment paper until evenly thin.
  3. In a shallow bowl, beat eggs with milk until combined.
  4. In a separate bowl, mix parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
  5. Dip each chicken piece into the egg mixture, letting excess drip off.
  6. Press the chicken firmly into the parmesan-breadcrumb mix, coating both sides thoroughly.
  7. Heat olive oil in a skillet over medium heat until hot but not smoking.
  8. Cook chicken pieces in the skillet, about 4–5 minutes per side, until golden brown and cooked through (internal temperature 75°C/165°F).
  9. Transfer cooked chicken to a plate lined with paper towels to drain excess oil.
  10. Serve immediately or customize with preferred sides or sauces.

Notes

For a healthier option, bake the coated chicken at 200°C (400°F) for 20–25 minutes, flipping halfway.
