  • 1 head fresh cauliflower
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1/2 cup vegetable broth

  • 1/4 cup fresh cilantro, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop your cauliflower into small florets.
  3. Spread the cauliflower evenly on a baking sheet lined with parchment paper.
  4. Drizzle the cauliflower with olive oil and toss well until every floret is coated.
  5. Place the baking sheet in the preheated oven and roast the cauliflower for about 20 minutes or until golden brown and crispy on the edges.
  6. Stir the cauliflower halfway through roasting to ensure even cooking.
  7. In a large skillet over medium-high heat, add olive oil if needed and then add the ground beef.
  8. Cook the ground beef until browned, breaking it apart with a spatula as it cooks for about 5-7 minutes.
  9. Drain any excess fat from your skillet if necessary.
  10. Sprinkle in chili powder, cumin, garlic powder, salt, and pepper into the browned beef and stir until well combined.
  11. Pour in about half a cup of vegetable broth to keep things moist while cooking and let it simmer gently for another 5 minutes.
  12. In serving bowls, create a base layer with roasted cauliflower topped generously with seasoned ground beef.
  13. Finish off each bowl with dollops of sour cream or Greek yogurt along with fresh cilantro sprinkled on top.
  14. Serve immediately while everything is still warm.
