  • 1 pound pasta, your favorite shape
  • 28 ounces canned tomatoes, ripe (preferably San Marzano)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup vegetable broth, adjust for consistency if needed

Instructions

  1. Boil salted water in a large pot over high heat.
  2. Add pasta to the boiling water and cook according to package instructions until al dente.
  3. Reserve about one cup of pasta water before draining.
  4. In a large skillet over medium heat, pour in two tablespoons of olive oil.
  5. Add minced garlic to the skillet and sauté for about 1-2 minutes until fragrant but not browned.
  6. Pour in canned tomatoes along with their juices into the skillet with garlic.
  7. Stir well and let the tomatoes simmer for about 10 minutes until they become saucy and slightly thickened.
  8. Reduce heat to low and slowly stir in the heavy cream until fully combined with the tomato mixture.
  9. Let it simmer gently for an additional 5 minutes while stirring occasionally.
  10. Add drained pasta directly into the skillet with the creamy tomato sauce.
  11. Toss everything together until each piece of pasta is generously coated in the sauce.
  12. If necessary, gradually add reserved pasta water until you reach desired consistency.
  13. Remove from heat and fold in freshly chopped basil leaves just before serving.

Notes

Store leftovers in an airtight container.

Reheat gently on low heat.
