Instructions

  1. In a large saucepan over medium heat, add 1 tablespoon of olive oil.
  2. Once shimmering, add one chopped onion and sauté until translucent—about 5 minutes.
  3. Toss in 3 minced garlic cloves and stir for another minute until fragrant.
  4. Add 1 cup of rinsed red lentils to the pan along with 4 cups of vegetable broth.
  5. Bring this mixture to a gentle boil then reduce heat to low.
  6. Cover and simmer for about 15 minutes or until lentils are tender and start to break apart.
  7. Grab an immersion blender (or transfer carefully to a regular blender).
  8. Blend until smooth and creamy, pulsing gently if you prefer some texture.
  9. Return the blended mixture back to medium heat.
  10. Stir in one can (13.5 oz) of coconut milk and 2 tablespoons of tomato paste.
  11. Mix until well combined, bringing everything together into creamy perfection.
  12. Season generously with cumin (1 teaspoon), paprika (1 teaspoon), salt (to taste), and pepper (to taste).
  13. Let it simmer gently for an additional 5 minutes, stirring occasionally.
