This Cozy Caramel Apple Eclair Cake is a no-bake dessert that combines layers of graham crackers, creamy vanilla pudding filling, spiced caramelized apples, and a drizzle of caramel sauce. It is simple, affordable, and full of warm seasonal flavors that make it perfect for gatherings or cozy nights at home.

  • 2 boxes instant vanilla pudding mix (3.4 oz each)
  • 4 cups cold whole milk
  • 1 tub whipped topping (8 oz, stabilized)
  • 3 medium apples, peeled and diced
  • 2 tbsp butter
  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon
  • A pinch of nutmeg (optional)
  • 1/2 package cream cheese, softened (optional, for richer filling)
  • 1/2 cup caramel sauce (store-bought or homemade)

Instructions

  1. Peel and dice the apples into small cubes.
  2. In a skillet over medium heat, melt the butter. Add the diced apples, brown sugar, and cinnamon. Stir and cook for 5–7 minutes until the apples soften but remain slightly firm. Add nutmeg if desired. Remove from heat and allow to cool.
  3. In a mixing bowl, whisk together the vanilla pudding mix and cold milk until it begins to thicken.
  4. If using cream cheese, beat it until smooth, then mix into the pudding. Fold in the whipped topping gently until combined.
  5. In a rectangular baking dish, arrange a layer of graham crackers to cover the bottom.
  6. Spread a layer of pudding mixture evenly over the crackers.
  7. Repeat the process with additional layers of graham crackers and pudding mixture until the dish is nearly full, finishing with a pudding layer.
  8. Spread the cooled apple mixture evenly over the top layer.
  9. Drizzle caramel sauce generously over the apples.
  10. Cover the dish and refrigerate for at least 4 hours, or overnight for best results.
  11. Slice into squares and serve chilled.

Notes

For a lighter dessert, substitute low-fat milk, sugar-free pudding mix, or light whipped topping.

Add chopped pecans or walnuts on top of the caramel apples for extra crunch.
