Ingredients

  • 5 large ripe tomatoes, chopped
  • 2 cups cottage cheese
  • 1 cup vegetable broth
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1/2 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • salt to taste

Instructions

  1. In a large pot over medium heat, add two tablespoons of olive oil.
  2. Once hot, toss in one diced onion and three minced garlic cloves.
  3. Sauté until they’re translucent and fragrant for about 5 minutes.
  4. Chop five large ripe tomatoes into quarters and add them to the pot along with one cup of vegetable broth.
  5. Stir well and let everything simmer together for about 10 minutes until the tomatoes break down.
  6. Using an immersion blender (or transferring carefully to a regular blender), blend the mixture until smooth.
  7. Return the blended mixture to low heat and stir in two cups of cottage cheese.
  8. Allow it to heat through while stirring gently for about 5 minutes.
  9. Add salt and pepper to taste, starting with half a teaspoon of each and adjusting according to your preference.
  10. Just before serving, stir in half a cup of chopped fresh basil for an aromatic kick.
  11. Garnish each bowl with extra basil leaves or a dollop of cottage cheese if desired.
  12. Serve immediately while it is still warm.
