  • 1/2 cup granulated sugar
  • 1 large egg

  • Optional: small chocolate chips or finely chopped nuts

Instructions

  1. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  2. Cream butter and sugar: In a large bowl, beat softened butter and sugar with a hand or stand mixer for 2–3 minutes until light and fluffy.
  3. Add egg and vanilla: Mix in the egg and vanilla extract until smooth and glossy.
  4. Combine wet and dry ingredients: Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  5. Add sprinkles: Gently fold in sprinkles and any optional mix-ins such as chocolate chips or nuts.
  6. Preheat waffle iron: Heat to medium and lightly grease with nonstick spray or butter.
  7. Cook cookies: Scoop 1 tablespoon of dough per cookie onto the waffle iron. Close gently and cook 3–5 minutes until lightly golden. Adjust time as needed for your waffle iron.
  8. Cool cookies: Carefully remove cookies and place on a wire rack to cool slightly.
  9. Serve or store: Serve warm or store in an airtight container for up to 5 days.

Notes

For even cookies, use the same amount of dough per waffle section.

Dough can be refrigerated for up to 24 hours before cooking.
