A comforting bowl of tomato soup enriched with fluffy cheese dumplings. This recipe combines the tangy flavor of tomatoes with the creamy texture of dumplings, creating a dish that is both hearty and satisfying. Perfect for lunch, dinner, or as a starter for gatherings.

For the Soup:

  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 800 g fresh ripe tomatoes, chopped (or 2 cans chopped tomatoes)
  • 750 ml vegetable broth or chicken broth
  • 1 tsp sugar (optional, to balance acidity)
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped

For the Cheese Dumplings:

  • 150 g all-purpose flour
  • 1 tsp baking powder
  • 1 large egg
  • 80 ml milk
  • 100 g grated cheese (cheddar, mozzarella, or a blend)
  • Pinch of salt and pepper

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Add chopped onion and sauté until soft and golden.
  2. Stir in minced garlic and cook for 1 minute, until fragrant.
  3. Add chopped fresh or canned tomatoes. Cook for 5 minutes, stirring occasionally, until the tomatoes begin to soften.
  4. Season with salt, pepper, and sugar if needed.
  5. Pour in the broth, bring to a gentle boil, then reduce the heat. Simmer for 20 minutes, stirring occasionally.
  6. If you prefer a smooth texture, blend the soup with an immersion blender until creamy. If you like some texture, leave it chunky.
  7. While the soup simmers, prepare the dumplings. In a bowl, mix flour, baking powder, and salt. Stir in grated cheese.
  8. In another bowl, whisk the egg and milk together. Add this wet mixture to the dry ingredients. Stir gently until just combined.
  9. Drop spoonfuls of the dumpling batter into the simmering soup. Cover the pot with a lid and cook for 10–12 minutes without lifting the lid.
  10. Check one dumpling to ensure it is cooked through. It should be fluffy and light inside.
  11. Sprinkle fresh herbs into the soup and stir gently. Taste and adjust seasoning if needed.
  12. Serve hot, garnished with extra cheese or herbs if desired.

Notes

For a creamier soup, add a splash of cream or yogurt before serving.

Use vegetable broth for a vegetarian version, or chicken broth for added depth.

Dumplings should be cooked fresh in the soup for the best texture.
