  • 23 ripe but firm bananas
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar (or coconut sugar)
  • 1 teaspoon ground cinnamon
  • Non-stick cooking spray (optional, for air fryer basket)

Instructions

  1. Peel the bananas and slice them into thin rounds, about 1/8-inch thick. Aim for uniform thickness to ensure even crisping.
  2. Place the slices in a bowl and gently toss with lemon juice to prevent browning.
  3. In a small bowl, mix the sugar and cinnamon until combined.
  4. Lay the banana slices flat on a plate or parchment paper. Lightly sprinkle both sides with the cinnamon-sugar mixture.
  5. Preheat the air fryer to 300°F (150°C) for 2–3 minutes.
  6. Lightly spray the air fryer basket with non-stick spray or line it with perforated parchment paper.
  7. Arrange the banana slices in a single layer, making sure they are not overlapping.
  8. Air fry at 300°F (150°C) for 10 minutes. Open the air fryer, carefully flip the slices, and continue cooking for 8–12 more minutes. Monitor them closely to avoid burning.
  9. Transfer the chips to a wire rack or paper towel–lined plate to cool. They will become crisp as they cool.
  10. Once fully cooled, store in an airtight container at room temperature for up to 5 days.

Notes

For best results, use bananas that are ripe but still firm.

Avoid overcrowding the air fryer basket; cook in batches if needed.

Chips can be lightly re-crisped in the air fryer for 2–3 minutes if they soften over time.

To customize, try adding nutmeg, pumpkin spice, or even a pinch of chili powder for a spicy twist.
