  • 4 large eggs
  • ½ cup milk (or non-dairy milk)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon (for custard)
  • 2 tbsp butter (for frying)

For the coating:

  • ½ cup granulated sugar
  • 1½ tsp ground cinnamon

Instructions

  1. In a mixing bowl, combine cream cheese and a touch of vanilla or sweetener, if desired. Mix until smooth.
  2. Spread a generous layer of the filling on four slices of bread. Top with the remaining four slices to form sandwiches. Gently press the edges together.
  3. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon to make the custard mixture.
  4. Dip each sandwich into the custard mixture, turning to coat both sides evenly. Let excess drip off.
  5. Heat a non-stick skillet over medium heat. Add a small amount of butter.
  6. Place the dipped sandwiches onto the skillet. Cook for 2–3 minutes per side or until golden brown and crispy.
  7. In a separate shallow dish, mix granulated sugar and ground cinnamon.
  8. While the toast is still warm, immediately coat each sandwich in the cinnamon-sugar mixture on both sides.
