Chocolate-Covered Cheesecake Strawberries are a delightful dessert that combines fresh strawberries, creamy cheesecake filling, and a crisp chocolate coating. They are quick to prepare, visually stunning, and perfect for special occasions or casual snacking.

  • Fresh large strawberries
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup graham cracker crumbs
  • 8 oz semi-sweet or milk chocolate, melted
  • 4 oz white chocolate (optional, for drizzling)

Instructions

  1. Wash the strawberries thoroughly and pat them completely dry with paper towels. Any remaining moisture can prevent the chocolate from sticking.
  2. Remove the green stems and carefully core out the centers of the strawberries using a small paring knife or strawberry corer, creating a hollow space.
  3. In a mixing bowl, beat the softened cream cheese until smooth and fluffy. Add powdered sugar and vanilla extract, then mix until creamy.
  4. Transfer the cheesecake filling into a piping bag fitted with a star or round tip. If you don’t have one, use a zip-top bag and cut a small opening in one corner.
  5. Pipe the cheesecake filling into the hollowed strawberries, allowing it to slightly mound over the top.
  6. Sprinkle graham cracker crumbs on top of the filling to mimic a cheesecake crust and add texture.
  7. Melt the semi-sweet or milk chocolate in a microwave-safe bowl, heating in 20–30 second intervals and stirring until smooth. Alternatively, use a double boiler for even melting.
  8. Hold each filled strawberry by the leafy top or insert a toothpick at the top. Dip the strawberry into the melted chocolate, covering it fully or partially depending on preference.
  9. Place dipped strawberries onto a parchment-lined baking sheet.
  10. If desired, melt the white chocolate and drizzle it over the coated strawberries for decoration.
  11. Refrigerate the tray of strawberries for 20–30 minutes until the chocolate is completely set.
  12. Serve chilled and enjoy within 24 hours for the best flavor and texture.

Notes

Ensure strawberries are fully dry before dipping to avoid chocolate slipping off.

For a flavor twist, add lemon zest to the cheesecake filling.
