Chocolate Chip Cheesecake Bars combine two classic desserts into one irresistible treat. With a buttery cookie base, a creamy cheesecake layer, and plenty of chocolate chips, these bars are easy to prepare, affordable, and always a crowd favorite.

  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs (divided)
  • 2 teaspoons vanilla extract (divided)
  • 2 cups chocolate chips (plus extra for topping)
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar (for filling)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add one egg and 1 teaspoon vanilla extract. Mix until smooth.
  5. Gradually add dry ingredients to the butter mixture and stir until dough forms.
  6. Fold in 1 ½ cups of chocolate chips, reserving some for later use.
  7. In a separate bowl, beat cream cheese until creamy. Add ½ cup sugar and mix well.
  8. Add the remaining egg and 1 teaspoon vanilla extract. Beat until smooth and lump-free.
  9. Spread half of the cookie dough evenly into the prepared baking dish.
  10. Pour cheesecake mixture over the dough, spreading into an even layer.
  11. Drop spoonfuls of the remaining cookie dough across the cheesecake layer.
  12. Sprinkle extra chocolate chips on top.
  13. Bake for 35–40 minutes, until the edges are golden and the center is set.
  14. Allow bars to cool completely, then refrigerate for at least 2 hours before slicing.

Notes

Chill before slicing to achieve neat squares.

You can substitute semi-sweet chips with dark or milk chocolate.

Adding nuts like walnuts or pecans gives a crunchy twist.
