Ingredients

Scale
  • 1 cup pitted dates
  • 1/2 cup rolled oats
  • 1/4 cup cocoa powder
  • 1/4 cup nut butter (almond, peanut, or cashew)
  • 1 tsp vanilla extract
  • A pinch of salt
  • Optional toppings: shredded coconut, chopped nuts, or cocoa powder

Instructions

  1. Soak 1 cup of pitted dates in warm water for 10 minutes. Drain and pat dry.
  2. In a food processor, combine 1/2 cup rolled oats, 1/4 cup cocoa powder, and a pinch of salt. Pulse until fine.
  3. Add soaked dates, 1/4 cup nut butter, and 1 tsp vanilla extract. Blend until a sticky, cohesive dough forms.
  4. Test the dough: if sticky, add a teaspoon of oats; if dry, add a bit more nut butter.
  5. Roll the dough into 1-inch balls using your hands.
  6. Optionally, roll balls in shredded coconut, chopped nuts, or cocoa powder.
  7. Place balls on a parchment-lined tray and refrigerate for at least 30 minutes.
  8. Serve chilled or store in an airtight container in the fridge.

Notes

Nut butter type can be swapped depending on preference or dietary needs.

Add-ins like mini chocolate chips, dried cranberries, or seeds can enhance flavor and texture.

Lightly dust hands with cocoa powder or oats to prevent sticking when rolling.
