This chicken, spinach, and mushroom oven dish is a low-carb, wholesome meal that combines tender chicken, earthy mushrooms, and fresh spinach in a creamy, cheesy bake. It’s perfect for weeknight dinners or meal prep, offering a satisfying flavor without heavy carbs.

  • 500g boneless, skinless chicken breasts or thighs
  • 200g fresh spinach
  • 250g mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 200ml cream or light cream alternative
  • 100g cheese (mozzarella, cheddar, or a mix)
  • 100ml chicken broth
  • 1 tsp Italian seasoning or herbs of your choice
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Prepare the chicken by trimming and cutting into even pieces. Season with salt, pepper, and Italian seasoning.
  3. Cook vegetables: Heat olive oil or butter in a skillet over medium heat. Sauté onions until soft. Add garlic and cook 1 minute. Add mushrooms and cook until browned. Stir in spinach until wilted.
  4. Prepare creamy sauce: Pour in chicken broth and cream. Simmer until slightly thickened. Adjust seasoning as needed.
  5. Assemble the dish: Grease an ovenproof dish. Place chicken pieces in a single layer. Spread the mushroom-spinach mixture evenly on top. Pour the creamy sauce over everything. Sprinkle cheese over the top.
  6. Bake: Place in the oven for 25–30 minutes, until chicken is cooked through and cheese is melted and golden. Optional: broil for 2–3 minutes for a crispier top.
  7. Rest and serve: Let the dish rest for 5 minutes before serving. Serve warm with a salad or roasted vegetables.

Notes

Frozen spinach can be used if thawed and drained.

Chicken thighs remain juicier than breasts and can be substituted freely.

You can customize by adding other vegetables like zucchini or bell peppers.

Adjust seasoning with herbs, nutmeg, or red pepper flakes for flavor variations.
