  • 1 cup orzo pasta
  • 2 cups broccoli florets, fresh
  • 3 cloves garlic, minced
  • Juice of 1 lemon, freshly squeezed
  • 4 cups chicken broth, low-sodium
  • 2 tablespoons olive oil, extra virgin
  • 1/2 cup Parmigiano-Reggiano cheese, grated

Instructions

  1. Gather your tools, including a large pot, a cutting board, and a sharp knife.
  2. Bring 4 cups of chicken broth to a boil in the large pot over medium-high heat.
  3. Add 1 cup of orzo pasta to the boiling broth and stir occasionally.
  4. Cook the orzo until al dente according to package instructions, about 8-10 minutes, then drain any excess liquid if necessary.
  5. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  6. Slice chicken sausage into bite-sized pieces and add them to the skillet.
  7. Sauté the sausage until golden brown, about 5-7 minutes.
  8. Add 3 minced garlic cloves and 2 cups of broccoli florets to the skillet.
  9. Sauté everything together for an additional 3-4 minutes until the broccoli is bright green but still tender-crisp.
  10. Reduce heat to low and pour in the drained orzo along with juice from one lemon.
  11. Mix well until everything is evenly combined.
  12. Sprinkle in half a cup of grated Parmigiano-Reggiano cheese while stirring until it melts into creamy goodness.
  13. Transfer the dish into bowls and garnish with extra cheese or lemon zest if desired.
