  • Sweet Potatoes, firm and unbruised
  • Cooked Chicken, shredded or diced
  • 1 cup Chicken Broth, low-sodium
  • Frozen Mixed Vegetables, a medley of peas, carrots, and corn
  • 2 tablespoons Cornstarch
  • 1/2 cup Milk or Plant-based Milk
  • Dried Thyme
  • Pepper and Salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes thoroughly.
  3. Poke holes all over the sweet potatoes using a fork.
  4. Place the sweet potatoes on a baking sheet lined with parchment paper.
  5. Roast the sweet potatoes in the oven for 45-50 minutes until they are tender enough to be pierced easily with a fork.
  6. While the sweet potatoes are roasting, heat a saucepan over medium heat.
  7. Add shredded chicken and frozen mixed vegetables to the saucepan.
  8. Pour in about one cup of chicken broth and bring it to a simmer.
  9. Sprinkle in two tablespoons of cornstarch mixed with three tablespoons of cold water to thicken the filling.
  10. Stir in half a cup of milk (or plant-based milk) into the pan along with dried thyme.
  11. Season generously with salt and pepper.
  12. Allow the mixture to bubble gently until it thickens, stirring frequently for about 5-7 minutes.
  13. Once roasted, take out the sweet potatoes from the oven and let them cool slightly.
  14. Carefully slice each potato lengthwise down the center without cutting all the way through.
  15. Gently press open each potato so you can stuff them.
  16. Spoon generous amounts of your creamy chicken filling into each sweet potato pocket until they are overflowing.
  17. Pop the stuffed sweet potatoes back in the oven for about 10 minutes at 350°F (175°C) to warm everything through again.
  18. Serve immediately while hot, garnished with fresh herbs or a sprinkle of paprika if desired.
